Salmon En Croute Recipe

An easy to prepare but great looking dinner party dish.

Recipe Ingredients for Salmon en Croute

900 g raw salmon
354 g raw puff pastry
700 g spinach
1 egg
100 g butter
1 tbsp chopped tarragon
1 tbsp lemon juice

Recipe Directions for Salmon en Croute

  1. Make the butter by mixing the tarragon, lemon juice and butter together.

  2. Trim the salmon fillets so they are equally sized.

  3. Roll out the puff pastry into two rectangles.

  4. Cook the spinach for 1 minute at high heat in half the butter.

  5. Spread half the spinach onto one of the rectangles of pastry, so that it is the same size as the salmon fillets.

  6. Lay the salmon on top of the spinach and brush with the remaining tarragon butter.

  7. Put the rest of the spinach on top of the salmon fillets.

  8. Cover with the pastry, seal the edges and brush with the egg.

  9. Chill for 30min to 1hour.

  10. Bake for 35-40minutes at 200C.

  11. Rest for 5 minutes

  12. Serve!
