From Southern Living, March 2008. Each serving is one - 2 oz salmon croquette.

Recipe Ingredients for Salmon Croquettes

14 oz pink salmon
1 large egg, lightly beaten
1/3 cup cornmeal
1/2 cup buttermilk
2 tbsp self-rising flour
1/8 tsp garlic salt
3 tbsp Olive Oil

Recipe Directions for Salmon Croquettes

  1. Drain salmon and place in a medium bowl

  2. Stir in egg and next 4 ingredients until blended

  3. Drop salmon mixture in 2 oz patties into hot oil in a large skillet over medium-high heat

  4. Fry in batches 2 to 3 minutes on each side or until browned

  5. Drain on paper towels

  6. Leep warm on a wire rack in a jelly-roll pan in a 200 degree F oven
