Main dish; salmon patties dipped in flour, egg, saltine cracker crumbs, fried in small amount low-fat vegetable spread (Fleishmann's Olive Oil w/sea salt vegetable spread).

Recipe Ingredients for Salmon Croquettes

5 ounces salmon
1 ounce onion
1 ounce celery
1/4 tsp salt
1/8 tsp pepper
3 tbsp Smart Balance
2 tbsp flour
4 tbsp fat free half and half
1/4 cup water
2 ounces saltine crackers
1/4 cup eggbeaters

Recipe Directions for Salmon Croquettes

Prepare white sauce: Melt 1 tbsp vegetable spread in pan; stir in 2 tbsp flour. Add fat-free half and half and water. Stir until thickened. Cool. Using cooked or canned salmon, place salmon in mixing bowl and mash with fork. Add diced onion, celery, salt, and pepper. Stir in white sauce; chill. Divide mixture into 4 portions. Form into patties; roll in flour, dip in eggbeaters, then roll in saltine cracker crumbs. Melt remaining 2 tbsp of vegetable oil spread over medium heat; fry patties until browned, turning once. Serve immediately.
