Recipe Ingredients for Salmon croquettes

14 3/4 oz red salmon
1/2 medium onion, diced
1 egg white
1/4 cup breadcrumbs
1 teaspoon old bay seasoning
1 salt, pepper, paprika
2 tablespoons lemon juice
1/2 cup bread- or cracker crumbs

Recipe Directions for Salmon croquettes

  1. Drain salmon over a bowl, reserve juice for later.

  2. Carefully remove bones and skin.

  3. Sauté onions in a large sauté pan until translucent.

  4. In a medium bowl, flake salmon and add about ¼ cup of salmon juice, egg, breadcrumbs, spices, lemon juice and sautéed onion.

  5. Mix well. Shape into four equal patties.

  6. Roll the patties in either bread- or cracker crumbs.

  7. Reheat sauté pan with some olive oil on medium-high heat.

  8. Carefully place patties into hot oil and pan-fry until golden, about 3-4 minutes for each side.
