We have this about once a week, prep about 24 to 48 hours in advance and keep chilled in fridge. The longer the vinegar and dill flavors sit in it, the better it tastes. Great for a night when you won't have time to make something since it tastes best after a day or two!

Recipe Ingredients for Salmon and chickpea salad

31 oz chickpeas
14 3/4 oz red salmon
1/4 cup red onion, diced
1/2 cup celery, diced
4 tbsp parsley
4 tbsp dill
1/4 cup extra virgin olive oil
3 tbsp balsamic vinegar

Recipe Directions for Salmon and chickpea salad

  1. Mix all ingredients in medium to large bowl, you can use just one can of chickpeas if you want to cut back a little on calories.

  2. Cover bowl in plastic wrap and chill in fridge for at least 24 hours.

  3. Enjoy!
