Salmon Casserole Recipe

Salmon casserole made with canned salmon, but can be substituted with fresh.

Recipe Ingredients for Salmon Casserole

29 1/2 oz. canned salmon, drained, flaked
1 lb. fresh mushrooms, coarsely chopped
1/4 tsp. ground nutmeg
1/4 tsp. black pepper
1/4 cup fresh chopped onion
1 tbsp. margarine
2 tbsp. flour
1 1/2 cup fat free milk
1/2 cup bread crumbs

Recipe Directions for Salmon Casserole

Combine salmon, mushrooms, nutmeg, and pepper in 12/8-inch baking dish. Saute onion in margarine in medium saucepan 1 minute. Stir in flour and cook 1 minute. Whisk in milk, and heat to boiling, whisking until thickened, for about 1 minute. Pour over salmon and sprinkle with breadcrumbs. Bake, uncovered, at 375 degrees F until lightly browned, about 35 minutes.
