Healthy and delicious salmon cakes!

Recipe Ingredients for Salmon cakes

1 egg
1/4 cup of skim milk
2 slices double fiber bread
213 g canned salmon
2 tsp dijon mustard
1 green onion, thinly sliced
1 tsp olive oil

Recipe Directions for Salmon cakes

  1. Whisk egg with milk in a medium bowl.

  2. Tear bread into small pieces, then stir into egg mixture until mushy.

  3. Stir egg-bread mixture with a fork, then mash in salmon, crushing any bones.

  4. Stir in dijon, dill and onion until combined. Season with pepper.

  5. Scoop 1/4 cup mixture, firmly packed, and form a patty about 1/2 inch thick.

  6. Repeat with remaining mixture, making 6 patties.

  7. Heat a large non-stick frying pan over medium.

  8. Add 1tsp oil. Place patties in pan. Cook, uncovered, until golden, 3 minutes per side. Remove to plate.
