Recipe from the back of the Chicken of the Sea Salmon pouch. I substituted Egg Beaters instead of the egg, so about 50 calories from the total recipe can be deducted. Also, the salmon calories listed above are higher than the package by about 200 calories. Total recipe is really 250 calories less than calculated here, or about 30 less per serving.

Recipe Ingredients for Salmon Cakes

1/4 cup red bell pepper, chopped
1/4 cup green bell pepper, chopped
1 tbsp lemon juice
1/4 tsp salt, seasoned or garlic
1 dash cayenne pepper
7 oz Salmon, Pink
1 egg
1 cup bread crumbs, dry
1 tbsp olive oil

Recipe Directions for Salmon Cakes

Combine bell peppers, Mayo, lemon juice, salt, and pepper. Stir in salmon, egg, and 1/4 cup of the breadcrumbs. Mix until blended. Divide into 8 balls, flatten, and coat with remaining bread crumbs. Fry in olive oil in skillet.
