Recipe Ingredients for Salmon Cakes

14 3/4 ounces salmon
1/2 cup corn meal
3/4 cup all purpose flour
2 eggs
1/2 teaspoon salt
1/2 teaspoon pepper
1 cup shortening

Recipe Directions for Salmon Cakes

  1. Heat iron skillet on stove Medium-High and add shortening to soften.

  2. Remove bones and skin from salmon.

  3. Mix in flour, corn meal, eggs, salt and pepper.

  4. Reduce heat on skillet to Medium.

  5. Drop mixture into skillet and cook both sides for 4 minutes.

  6. Remove cakes from skillet and place on plate. Use a paper towel to absorb excess oil.
