Appetizer made from leftover cooked salmon. Can be made into small dinner sized portions as well.

Recipe Ingredients for Salmon Cakes

0.25 cup, sliced Onions
0.25 cup Parsley
1 large Egg, Whole
1 cup Bread Crumbs, Dry, Grated, Plain
0.5 cup Bread Crumbs, Dry, Grated, Plain
25 grams Juice
0.8 oz Fresh Churned Butter Unsalted
1 tsp Classic Dijon Mustard
1 tsp Classic Dijon Mustard
1 tsp Classic Dijon Mustard
0.5 tsp Franks RedHot Cayenne Pepper Sauce Original 23oz
2 fillet Salmon, Pink
1/2 cup Panko
1 cup Panko

Recipe Directions for Salmon Cakes

In a food processor, pulse onins and parsley until finely chopped. Add egg, fresh bread crumbs, lemon zest, lemon juice, butter, mustart and hot pepper sauce, pulse until well combined. Add salmon and pulsse to combine. Transfer to a bowl and season to taste with salt and pepper. Cover and refregerate for at least 2 hours. Shape heaping teaspoons of salmon mixture into small patties. Place panko in a shallow dish and roll salmon patties to coat. In a large skillet, heat oil over medium-high heat. Working in batches, fry salmon patties for about 2 minutes per side or until golden on both sides. Transfer to a plate lined with paper towels to remove excess oil, then place on a baking sheet and keep warm in a low oven. Repeat with the remaining patties, oiling skillet as necessary. Makes about 25 appetizers.
