Recipe Ingredients for Salmon Cakes with Lemon-Herb Sauce

7 1/10 ounces pink salmon
1/4 cup finely chopped red pepper
1/4 cup finely chopped green onion
1/4 cup light mayonnaise
1 tablespoon fresh lemon juice
1/4 tablespoon seasoned salt
1 cayenne to taste
1 large egg, beaten
1 cup dry bread crumbs
3 tablespoons unsalted butter
3/4 cup light mayonnaise
1 tablespoon fresh lemon juice
1 tablespoon horseradish
1 teaspoon dried thyme

Recipe Directions for Salmon Cakes with Lemon-Herb Sauce

  1. In medium bowl, gently flake salmon. Stir in chopped red pepper, green onion, 1/4 cup mayonnaise, 1 tablespoon lemon juice, seasoned salt and cayenne pepper.

  2. Stir in egg and 4 tablespoons of bread crumbs. Divide and form mixture into 8 balls. Place remaining bread crumbs on a plate. Roll balls in bread crumbs and flatten into cakes about 1/2 inch thick. In a lightly buttered skillet, over medium heat, fry cakes until golden brown on both sides.

  3. For Sauce:

  4. In small bowl, combine 3/4 cup mayonnaise, lemon juice, horseradish and thyme. Chill until ready to serve.
