Makes 6 servings



Quick, easy recipe with a slight kick depending on how much red pepper you add. I also put it between whole wheat buns, slice of tomato and lettuce.

Recipe Ingredients for Salmon Burger

16 ounce salmon
2 eggs
1/4 cup parsley, fresh
2 tbsp onion, diced
1/4 cup italian bread crumbs
2 tbsp lemon juice
1/2 tspn basil, dry
1 pinch red pepper flake
1 tbsp olive oil
2 tbsp light mayonnaise
1 tbsp lemon juice
1 pinch basil, dry

Recipe Directions for Salmon Burger

  1. In a medium bowl, mix salmon, eggs, parsley, onion, breadcrumbs, 2 tablespoons of lemon juice, 1/2 teaspoon of basil and red pepper flakes. Form into 6 firmly packed patties.

  2. Heat oil in large skillet over medium heat. When oil is hot, add patties and cook for 4 minutes per side.

  3. In a small bowl, mix mayo, 1 tbsp of lemon juice and a pinch of basil. Use sauce for patties.
