Recipe Ingredients for Salmon Barley Soup

4 serving (Kroger) low sodium chicken broth
0.5 cup Barley
1 medium (2-1/2" dia) Onions
0.25 pepper, large (3-3/4" long, 3" dia) Peppers, Sweet, Yellow
1 stalk, medium (7-1/2" - 8" long) Broccoli
1 cup Asparagus
1 small Squash, Summer, Zucchini, Includes Skin

Recipe Directions for Salmon Barley Soup

Pour stock in a 3 to 4qt soup pot. Add uncooked barley and simmer for 5 minutes. Dice onions and peppers and add to the pot. simmer another 5 minutes. Add diced broccoli, asparagus, zucchini, and raw Salmon. Simmer until veggies are soft and salmon is cooked through.
