Hungarian pickled sumemr slaw from George Lang's book

Recipe Ingredients for Salmagundi

1 head cabbage
3 stalks celery
1 onion
1 cucumber
2 green peppers
1/2 cup water
1/4 cup white vinegar
1/4 cup sugar
1/4 teaspoon pepper
1/2 teaspoon salt

Recipe Directions for Salmagundi

  1. Peel and slice all vegetables as thin as possible

  2. Blanch celery, carrot, green pepper

  3. Place each vegetable in a bowl and salt.

  4. Leave for an hour.

  5. Wring out and place vegetables together in a bowl.

  6. Place water, vinegar, salt, pepper and sugar in pan and bring to a boil.

  7. Turn off heat.

  8. Let it cool down and mix in the vegetables.

  9. Adjust to taste with spices.
