Easy-Does-It Diet frozen meal recipe- without the mushroom gravy that wouldn't thicken properly

Recipe Ingredients for Salisbury Steak

1 lb. ground beef
3 potatoes
1/2 cup chicken broth
4 cloves garlic
3 lb. mixed vegetables

Recipe Directions for Salisbury Steak

  1. Peel 6 medium potatoes and cut into quarters. Place in saucepan and cover with water. If desired, add 4 peeled, whole cloves of garlic. Bring water to a boil, and cover. Simmer potatoes for about 15 minutes, or until tender.

  2. Divide 1 lb ground beef into 6 patties, approximately 1⁄2 inch thick. Spray broiler pan with non-stick spray or coat lightly with olive or canola oil. Place patties under broiler, about 6 inches below heating element. Broil for approximately 6 minutes on each side, until cooked through and lightly browned.

  3. Drain water from potatoes, and add salt and pepper to taste. Pour in 1⁄4 to 1⁄2 cup chicken broth as you mash the potatoes by hand or with electric mixer.

  4. Place one patty in each of six containers, and divide mashed potatoes evenly between them. Add frozen mixed vegetables, cover, and place in freezer.
