Recipe Ingredients for Salami Egg Bake

4 oz sliced salami, cut into thin strips
2 tbl finely chopped red onion
12 oz Fit & Active Egg substitute (equivalent of 6 eggs)
1/4 cup 1% milk
3 oz neufchatel cheese, cut into small cubes
1/2 cup chives
8 oz frozen broccoli, chopped
1/4 cup Italian bread crumbs
3/8 cup reduced fat shredded cheddar cheese

Recipe Directions for Salami Egg Bake

  1. Heat oven to 325-degrees.

  2. Spray nonstick skillet with nonstick cooking spray. Cook salami and onion for 3 minutes or until onion is tender.

  3. Beat eggs, milk and chives until well-blended. Stir in salami and onions, cheese, chives, and broccoli. Folding until well-blended.

  4. Spary bottom of 9 X 9-inch baking pan with nonstick cooking spray. Sprinkle bread crumbs evenly over bottom. Sprinkle cheddar cheese evenly over crumbs.

  5. Pour egg mixture over crumbs and gently spread evenly in pan.

  6. Bake for 25 to 35 minutes, or until toothpick inserted in center comes out clean.

  7. Cut into 16 squares or triangles to serve for breakfast. To serve as appetizers, cut each piece in half again for 32 appetizers.
