Fresh and very filling summer salad

Recipe Ingredients for Salade Niçoise

1 hard boiled egg
8 pieces g) Cacerena Black Pitted Olives
8 cherry tomatoes
0.33 cup green beans
75 grams tuna, drained
1 tbsp extra virgin olive oil
1 tbsp lemon juice
1 tsp thyme
1/2 cup new potatoes, boiled

Recipe Directions for Salade Niçoise

  1. Boil eggs. When ready, peel and chop into small pieces.

  2. Once eggs are in water, peel and cut potatoes. Add to boiling water and cook until tender.

  3. Whisk together olive oil, thyme and lemon juice. When potatoes are done cooking, toss with 1/2 of the dressing.

  4. Chop tomatoes and green beans to desired size and add to plate of fresh greens.

  5. Add the chopped egg, marinated potatoes, flaked and drained tuna and the olives. Drizzle a wee bit of the remaining dressing over and serve immediately.
