An adaptation of the classic french salad. The addition of beans boosts the fiber and protein.

Recipe Ingredients for Salade Nicoise With White Beans

1 lb fresh green beans
12 oz tuna, white, drained solids
2 cups canned cannellini beans, drained and rinsed
2 large tomatoes, seeded and chopped
1 Chopped fresh basil to taste
1/2 red onion, finely sliced
6 black olives, halved
2 tbsp olive oil
2 tbsp balsamic vinegar
2 cloves garlic, minced
1/2 tsp tomato paste

Recipe Directions for Salade Nicoise With White Beans

  1. Wash, trim, and chop the green beans. Steam them for 5-6 minutes, then plunge into an ice water bath.

  2. While the green beans are steaming, whip together the olive oil, vinegar, garlic, and tomato paste.

  3. Toss the tomatoes and beans together with the basil.

  4. Divide the tomato/bean mixture evenly among 4 plates, top with the green beans.

  5. Spoon the tuna on top of the veggies, and top with the sliced onions.

  6. Mound the olives on the very top, then drizzle with the dressing.

  7. Serve cold

  8. You can also just toss everything together once the green beans are steamed if you want to make it more quickly. It still tastes the same... :)
