Classic salad with tuna and olives. Perfect for a casual lunch on a hot day. Easy to prepare, but elegant looking.

Recipe Ingredients for Salade Nicoise

1 lb fresh green beans
12 oz tuna, white, drained solids
2 large tomatoes, seeded and chopped
1/2 red onion, finely sliced
6 black olives, halved
2 tbsp olive oil
2 tbsp balsamic vinegar
2 cloves garlic, minced
1/2 tsp tomato paste

Recipe Directions for Salade Nicoise

  1. Wash, trim, and chop the green beans. Steam them for 5-6 minutes, then plunge into a ice water bath.

  2. While the green beans are steaming, whip together the olive oil, vinegar, garlic, and tomato paste.

  3. Divide the tomatoes evenly among 4 plates, top with the green beans.

  4. Spoon the tuna on top of the veggies, and top with the sliced onions.

  5. Mound the olives on the very top, then drizzle with the dressing.

  6. Serve cold

  7. Note: You can add canned, rinsed white beans to this recipe for a fiber/protein boost and add about 40 calories per 1/4 cup to each serving.
