Green Bean salad with nicoise vinaigrette

Recipe Ingredients for Salade Nicoise

1/2 cup red onion, thinly sliced
1 lb potatoes, new (unpeeled)
1 lb green beans
2 eggs, hard-cooked
1/4 cup black olives, pitted
2 tbsp cider vinegar
1 clove garlic, minced
2 tsp Dijon mustard
4 anchovies, chopped
1/4 tsp pepper
1/3 cup canola oil

Recipe Directions for Salade Nicoise

  1. Whisk together vinegar, garlic, mustard, anchovies, and pepper. Gradually whisk in oil. Taste and adjust seasoning if necessary. Set aside.

  2. In bowl, cover onion with cold water and let stand for 30 minutes. Drain and set aside.

  3. Scrub potatoes and cook in boiling water for 15 to 18 minutes or just until tender. Drain and cut up. Place in large bowl and toss with half the vinaigrette; set aside.

  4. Cook beans in boiling water for 5 to 8 minutes or until tender-crisp. Drain and refresh under cold water. Pat dry and add to potatoes along with onion and remaining vinaigrette; toss well.

  5. Cut eggs into wedges and arrange along with olives over salad.
