Recipe Ingredients for Salad, Roasted Vegetables w/ Salmon

4 serving Southern Home Salmon Fillets, Wild
4 cups Mixed Baby Greens
6 oz Baby Spinach Salad
0.5 sweetpotato, 5" long Sweetpotato
0.5 bunch Broccoli
1 cup, strips or slices Carrots
1 medium (2-1/2" dia) Onions
2 medium Squash, Summer, Zucchini, Includes Skin
1 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
3 tbsp Tomato and Basil Crumbled Goat's Milk Feta Cheese
8 tbsp Balsamic Vinaigrette

Recipe Directions for Salad, Roasted Vegetables w/ Salmon

  1. Slice or chop the vegetables, except the greens and tomato and spread out on a shallow baking dish. Drizzle with a tiny amount of EVOO. Place the salmon on a separate baking dish, sprinkle with salt and pepper to taste. Roast both at 375* for about 25 minutes.

  2. Split the greens and spinach among 4 plates, top each with 1/4 of the roasted veggies and 1 salmon filet.

  3. Top with tomatoes and goat cheese crumbles. Drizzle with balsamic vinaigrette.
