SALAD WITH ROASTED BEETS, GOAT CHEESE AND CANDIED PECANS

Recipe Ingredients for Salad with Roasted Beets, Goat Cheese & Toasted Pecans

4 cups slices Beets
1/2 cup, halves Pecans
4 1/5 oz Goat's Soft Unripened Milk Cheese
8 cups Organics Field Greens Salad Mix

Recipe Directions for Salad with Roasted Beets, Goat Cheese & Toasted Pecans

  1. Toast pecans.

  2. To make the roasted beets (this step can be done early in the day or up to a day or two in advance):

  3. Rub beets lightly with a little olive oil or vegetable oil. Wrap tightly in foil and roast in a 400 F oven for an hour, or until the beets feel tender when poked with a fork. Cool, peel and cut into chunks.

  4. Next, place all the vinaigrette ingredients in a jar with a tight-fitting lid and shake until well mixed. Taste and adjust salt and pepper, if necessary. If the dressing seems too sharp, smooth it out with a little more oil. If it?s not zesty enough, add a little more vinegar.

  5. Spread out salad greens on a large platter. Toss the beet chunks with a few spoonfuls of dressing and scatter beets on top of the greens. Next, crumble goat cheese over the salad, followed by candied nuts and rings of red onion. Dribble dressing here and there. Pass any remaining dressing at the table when you serve the salad.
