Recipe Ingredients for Salad - Rice with Squash And Black Beans

1 cup brown rice
2 tablespoons olive oil
1 cup chopped onion
2 cups chopped butternut squash (about 1/2 medium squash)
1/4 cup water
3 tablespoons chopped parsley
1 Progresso black beans, 15 oz can rinsed and drained [132008] [13
1 yellow or red pepper
2 tablespoons fresh lemon juice
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 tbsp grated lemon zest for garnish (optional)

Recipe Directions for Salad - Rice with Squash And Black Beans

  1. Cook the rice according to package directions. Rinse and set aside.

  2. Meanwhile, in large nonstick skillet, heat 1 tablespoons of the oil over medium-high heat. Add the onions and squash, and cook, stirring, until slightly softened and lightly browned, about 10 minutes. Add the water and 11/2 tablespoons of the parsley, and cook 2 to 3 minutes more. Transfer the vegetables to a large bowl.

  3. Add the rice, black beans, lemon juice, salt, pepper, and the remaining 1 tablespoon olive oil and 11/2 tablespoons parsley. Stir to combine. Garnish with lemon zest, if desired.
