Great veggie-heavy salad with a balsamic vinaigrette.

Recipe Ingredients for Salad

1 c romaine lettuce
1/3 c broccoli, raw
1/3 c cucumber, peeled
1/3 c tomato
1/4 c bell pepper, raw
2 tsp extra virgin olive oil
1 tbsp balsamic vinegar
1/8 tsp salt
1/8 tsp ground black pepper
1 clove garlic

Recipe Directions for Salad

  1. Wash romaine lettuce and rip into small pieces.

  2. Wash and cut up broccoli, bell pepper, and cucumber.

  3. Wash, peel, and cut up cucumber.

  4. Mix olive oil, vinegar, salt, pepper, and garlic (minced).

  5. Mix all the ingredients.

  6. Enjoy!
