Guacamole and nonfat sour cream round out this filling salad.

Recipe Ingredients for Salad with Quinoa, Roasted Chicken

6 cups lettuce, shredded
1 cup tomatoes, diced
6 oz. chicken breast, shredded
1/4 cup nonfat sour cream
50 g guacamole chunky
1 tbsp olive oil
2 tbsp brown rice vinegar
1 tsp onion, diced
1/4 cup quinoa, cooked
1/2 tsp salt
1/4 tsp pepper

Recipe Directions for Salad with Quinoa, Roasted Chicken

  1. Sauté the onion in a small skillet. Add quinoa and heat through.

  2. Place 1/2 lettuce in each dish, drizzle with rice vinegar, add salt and pepper to taste.

  3. Top lettuce with warm quinoa mixture (divide between both salads), add shredded chicken, tomatoes and sprinkle with salt and pepper.

  4. Garnish with nonfat sour cream and guacamole.
