Seasoned and grilled chicken breast over a green salad with non-fat dressing

Recipe Ingredients for Salad with Grilled Lemon-Herb Chicken

1 lb boneless, skinless chicken breast, trimmed
1 tbsp extra virgin olive oil
1/2 tsp black pepper
1/2 tsp basil
1/2 tsp tarragon
1/2 tsp thyme
1 tsp lemon zest, grated
24 oz Classic Romaine
16 tbsp Kraft Fat Free Italian Dressing

Recipe Directions for Salad with Grilled Lemon-Herb Chicken

  1. Place chicken breast pieces (cutlets or tenders preferrred) in a medium bowl and coat with olive oil.

  2. In a small bowl, mix pepper, basil, thyme, tarragon, and lemon zest.

  3. Sprinkle spice mix over chicken pieces, seasoning all sides.

  4. Cover chicken and place in refrigerator for at least 15 minutes.

  5. Grill chicken pieces on a contact grill (George Foreman, Griddler, etc) on high for 3-6 minutes or until done.

  6. Place chicken pieces on a cutting board and let rest for 5 minutes.

  7. Slice chicken into strips or chunks.

  8. Serve approximately 2 ounces of chicken over 2 cups of salad mix drizzled with 2 tbsp of dressing per serving.

  9. Garnish salad with additional lemon zest if desired.
