From the folks at I Heart Kale. I'd put it for four servings, but then you get a whole pound of salad at a time! So halving this might not be a bad idea, and cutting the olive oil would be good, too.

Recipe Ingredients for Salad with Grapefruit, Avocado and Pumpkin Seeds

1/2 large jicama, very thinly sliced
1/2 avocado, thinly sliced
2 grapefruits, supremed
1/4 cup of raw pumpkin seeds
5 c. mixed salad greens
4 T. lime juice
1 T. lime zest
1/3 cup olive oil
1/4 cup cilantro
1/2 teaspoon salt
1 cayenne pepper to taste

Recipe Directions for Salad with Grapefruit, Avocado and Pumpkin Seeds

  1. Chop all ingredients as directed; throw into large bowl and mix. Reserve grapefruit juice while you're supreme-ing it.

  2. Blend all dressing ingredients plus reserved grapefruit juice, add, mix, serve. The mixed salad greens are optional.
