1 svg = about 6 oz. The best pastas for this are the short ones like gemelli, rotini, rotelli, rigatoni & penne. I do not recommend whole grain pastas since this recipe requires quite a bit of stirring and they tend to break apart easily. Cook the pasta until el-dante, DO NOT KILL IT. It's best if it's slightly chewy. Also, add the peas in at the end, after the mayo is well-distributed since they may break apart. SUBSTITUTION: Use Vegenaise instead of may. I have used it for years and swear by it. Most soy mayos are just gross, but Vegenaise is the best thing going. It tastes more like mayo than mayo and has no eggs or cholesterol.

Recipe Ingredients for Salad, Creamy Curried Pasta

1/2 pound pasta, cooked, gemelli or other
2 cups cauliflower, raw, chopped
4 tbsp Vegenaise
1 1/2 tbsp curry powder
1 tsp salt
6 oz water, used to even-out wt*

Mix everything together, reserving the peas until the end. Its great warm or cold. I usually eat it atop a big green leafy salad with carrot ribbons & pumpkin seeds dressed in a drizzle of flax seed oil.
