Recipe Ingredients for Salad - Cool Chick Salad

8 ounces (2 cups) chicken breast, cooked & chopped
1 cup canned black beans, rinsed & drained
1 cups canned corn
1 1/2 cups canned tomato, diced
1/2 cups red onion, diced
1/4 cup fresh coriander, chopped

Dressing:
2 tablespoons lime juice
1 tablespoon extra-virgin olive oil
1/2 teaspoon ground cumin
1/2 teaspoon sugar
1/4 teaspoon pepper
1/4 teaspoon salt

Recipe Directions for Salad - Cool Chick Salad

  1. Combine first 6 ingredients ina large bowl & mix well.

  2. In a small bowl, whisk together dressing ingredients.

  3. Pour over bean mixture and stir until evenly distributed.

  4. Cover and refrigerate until ready to serve.
