Recipe Ingredients for Salad: Chinese Chicken

1/2 lb snow peas
2 1/2 lbs shredded cabbage
1/4 cup soy sauce
1/4 cup lemon juice
2 tablespoons sugar
1 tablespoon rice vinegar
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon sesame oil
1/4 cup peanut oil
1 teaspoon ginger
2 teaspoons garlic
1 teaspoon chili flakes
6 cups chicken breasts
1/2 cup chopped scallions
1/2 cup chopped fresh cilantro
1/2 cup sliced almonds
2 tablespoons sesame seeds
3 oranges

Recipe Directions for Salad: Chinese Chicken

  1. Cook snow peas in boiling water about 1 1/2 minutes. Transfer to a bowl of ice water. Once cool, drain and pat dry. Cut into 1 inch wide strips and place in a large bowl along with cabbage.

  2. Whisk soy sauce, lemon juice, sugar, vinegar, ginger, garlic, salt and pepper in a bowl. Add both oils in a slow stream whisking until sugar is dissolved and dressing is well mixed. Toss chicken and scallions with 1/3 cup dressing. Add rest of salad ingredients and enough dressing to coat. Sprinkle with Chow Mein noodles if using.
