1/4 cup rice vinegar
2 tablespoons low-sodium soy sauce
2 tablespoons chunky peanut butter
1 tablespoon honey
3/4 teaspoon dark sesame oil
3 cups honeydew melon, (2 x 1/4-inch) strips
3 cups cantaloupe, (2 x 1/4-inch) strips
2 cups radish, daikon (2 x 1/4-inch) strips
1 cup Cucumber, English (2 x 1/4-inch) strips
3 tablespoons thinly sliced green onions
2 cups shredded cooked chicken breast
1/4 cup chopped fresh cilantro
2 tablespoons chopped walnuts, toasted
