Good for lunch as a main dish with toasted bread or as a side salad for lunch or dinner.

Recipe Ingredients for Salad + Cabbage & Carrots

16 cups chopped cabbage
2 cups grated carrots
20 pitted kalamata olives
2 tbsp olive oil
2 tbsp fresh lime juice
1 tsp white wine vinegar
1 cup chopped dill
1/8 tsp salt
1/8 tsp white pepper
1/16 tsp nutmeg

Recipe Directions for Salad + Cabbage & Carrots

  1. Cut cabbage julienne style or chop.

  2. Add salt, white pepper, and nutmeg and mix and squeeze with your hands. Squeezing helps extract the juice from the cabbage so it mixes with herbs.

  3. Add olive oil and mix again.

  4. Add lime juice and mix.

  5. Add white wine vinegar and mix.

  6. Lay on the serving dish and spray over carrots, dill, and olives with some decor in mind.
