Chicken with sage and mushroom gravy

Recipe Ingredients for Sage Chicken

2 tbsp. unsalted butter
2 tbsp. olive oil
1/4 cup all-purpose flour
32 oz. boneless, skinless chicken breasts
12 oz. mushrooms
2 c. chicken stock
3 tbsp. Half-and-Half
1/4 cup chopped parsley

Recipe Directions for Sage Chicken

Heat butter and oil in large skillet, then set to medium heat. Spread flour on a plate and dredge chicken breasts through to lightly coat. Do not discard leftover flour. Season chicken with salt and pepper. Sear chicken in hot butter and oil for 3 minutes; flip and cook for 1 minute. Remove chicken from pan and set aside. Add mushrooms to pan and cook for 1 minute; season with salt and pepper. Add leftover flour and stir until completely combined. Cook another 2 minutes or until the flour turns light blond color. Return chicken to pan and add chicken stock. Reduce heat to medium-low, cover and let cook for 6 minutes. Remove lid, stir in half-n-half and cook uncovered until sauce is thick and chicken is cooked. Stir in parsley and serve.
