Recipe Ingredients for Saffron Seafood Risotto

3 oz salmon, cut into 1" dice
4 oz cod, cut into 1" dice
3 oz prawns
2 teaspoons olive oil
1/2 onion, finely chopped
1 clove garlic, crushed
3 oz (arborio) rice
1 tomato, cut into a small dice
6 oz broccoli
3/4 pint stock
1 tablespoon fresh basil, chopped
1 pinch saffron (optional)

Recipe Directions for Saffron Seafood Risotto

  1. Heat the olive oil in a non-stick saute pan and cook the onion and garlic gently until softened

  2. Add the rice, saffron threads (if using) and stir to coat

  3. Add half of the stock to the pan, season well, get it simmering and stir the contents for about 5 minutes so that it reduces and is more or less absorbed

  4. Add the rest of the stock, put on the lid and cook for another 5 minutes

  5. Put the broccoli florets and fish cubes on top of the rice, replace the lid and steam for 6 or 7 minutes

  6. Finally, add the prawns, tomato and fresh basil, stir extremely gently and cook, covered for another minute or two. If at any stage the pan looks too dry then add a little more water, stock or white wine
