Recipe Ingredients for Saffron Risotto

3/4 cup arborio rice
1/2 of a medium onion, chopped
2 cloves of garlic, minced
1/4 cup white wine
1/4 tsp saffron threads
4 tbs olive oil
1/2 lb of asparagus
3 1/2 cups vegetable or chicken stock
1/2 cup grated parmesean cheese
1 salt and pepper to taste

Recipe Directions for Saffron Risotto

  1. trim ends off of the asparagus, and cut the stalks in 1/2 inch pieces, keeping the tips separate

  2. - break up the saffron threads and stir them into the white wine to dissolve

  3. - bring 2 cups of water to a boil, and blanch the asparagus tips

  4. - remove the tips from the pot and rinse with cold water to stop the cooking process

  5. - set them aside for later use as a garnish

  6. - bring 3 1/2 cups of stock to a boil

  7. - while stock if warming up, heat the bottom of a large saucepan over medium heat

  8. - add the olive oil to the pan, and when hot, stir in the onions

  9. - cook the onions until they are translucent, then add the garlic

  10. - cook for about a minute longer, then turn down the heat to med-low

  11. - add the rice to the oil, onion, and garlic, and cook for a few minutes coating the rice completely with oil

  12. - add one ladle full of stock and stir it into the rice until it is completely absorbed

  13. - once all the liquid is absorbed, add another ladle full and stir it in

  14. - continue adding broth and stirring it in

  15. - when you are about 2/3 through the broth add the asparagus pieces to the rice

  16. - before your last ladle of broth add white wine/saffron mixture to the rice, and then stir in the final broth

  17. - if the risotto is still too al dente at this point (mine was), turn off the heat. cover the pot, and let it sit for 5 minutes. the steam will finish the job. If the rice is already cooked to your liking, no need to let it sit, just move on to the next step.

  18. - stir the cheese in to the cooked risotto just before serving
