a wonderful Iranian dish which is usually served with tachine.

Recipe Ingredients for Saffron Chicken

2 tablespoon oil
24 ounce chicken thighs, skin removed
1 large onion, diced
4 cloves garlic
1 teaspoon salt
1 tablespoon turmeric

Recipe Directions for Saffron Chicken

  1. Place one tablespoon of oil in the sauté pan on medium heat. Sauté the diced onions and four cloves of garlic in one tablespoon of oil until translucent. Remove onion mixture to a bowl. In the same pan add another tablespoon of oil, turn the heat to high and brown the chicken thighs on both sides.

  2. reduce the heat and add one half cups of water to the pan as well as the onion mixture. Add salt, saffron and turmeric. Cover the pan bring the mixture to a simmer and allow it to simmer for 20 to 30 minutes until the chicken thighs are very tender.

  3. just before serving ad two tablespoons lemon juice.

  4. serve the chicken thighs over tachine (middle eastern baked rice dish).

  5. Add 1 cup of water
