Saffron chicken is a family favoutire, simple and quick to prepare. Serve with rice and green salad. Freezes well.

Recipe Ingredients for Saffron Chicken

8 thigh, bone and skin removed Chicken, Thigh, Meat Only
2 slice, medium (1/8" thick) Onions
1 tbsp Saffron
2 cup Soup, stock, chicken, home-prepared
1 serving Organic Olive Oil Cooking Spray

Recipe Directions for Saffron Chicken

Spray oil on caserole dish. Saute onions until transparent. Add Saffron and heat through until colour begins to release. Add skinless chicken thighs cut to chunks or halved. Add chicken stock. Add water to cover the chick. Bring to boil and then simmer for 30 minutes or so. TOp up with water if it begins to dry out.
