Medley of sweet corn, lima beans and tomatoes, onion & garlic. 3/4 cup serving. *Best with fried bits of sausage or hot dogs (if desired, calories t/b added)

Recipe Ingredients for Saccotash (3/4 cup serving)

30 oz sweet corn, cooked on the cob
411 g lima beans, canned & drained
411 g diced tomatoes
1/2 cup onions, sauteed
1 tbsp butter
1 clove garlic

Recipe Directions for Saccotash (3/4 cup serving)

  1. Saute onions in butter and * sausage or hot dog bits.

  2. Cut kernels off cobs of precooked corn.

  3. Drain can of small-med lima beans.

  4. Do not drain can of dice tomatoes.

  5. Add minced garlic and heat all together for 8-10 min.
