Pronounced "SAHB-lays." One of my mother-in-law's Swiss Christmas cookie recipes. Like a flat spritz cookie with lemon icing. Makes about 15 dozen, depending on thickness of cookie produced by your cookie press.

Recipe Ingredients for Sables (lemon cookies)

1 1/2 lb. butter, unsalted
1 1/2 cups sugar, granulated
4 eggs
6 2/3 cups flour
1/2 pound confectioner's sugar, approximate
94 g. lemon juice, juice of 2 lemons

Recipe Directions for Sables (lemon cookies)

  1. Cream together butter and granulated sugar.

  2. Beat in eggs. Slowly add flour at low mixer speed. Beat to form a soft dough.

  3. Press onto cookie sheet with a cookie press, using the die that makes a flat ribbon with a jagged top. Ribbons should be about 2 inches long.

  4. Bake at 375 degrees for 5-10 minutes (do not brown except at edges).

  5. While baked cookies are still warm, brush on a glaze of confectioner's sugar and lemon juice. Cool on rack until icing hardens.

  6. Can be made ahead of time and frozen.
