Indian Mung Bean dish. Best served with any dry main dish or tandoori dish, a side vegetable of your choice, and chapati or plain rice.

Recipe Ingredients for Sabat Moong Masaledar

1 cup mung beans
1/2 cup mung beans
1 tsp ginger paste
2 tsp garlic paste
1/2 tsp turmeric
1/2 tsp chili powder, hot
1 tbsp olive oil
1 tbsp unsalted butter
1 medium onion, minced
1/2 chili pepper, green, seeded and chopped
2 tsp ground cumin
2 tsp ground coriander
1 medium tomato, minced

Recipe Directions for Sabat Moong Masaledar

  1. Soak mung beans overnight, then boil in 7 cups (or more) with ginger, garlic, turmeric, chili powder, and salt, if any; stir, return to the boil.

  2. Reduce heat, cover partially, and simmer for 45-60 mins or until beans are cooked and mushy, stirring occasionally.

  3. Meanwhile, heat oil and butter in small pan over medium heat. Add onion and sauté until golden brown. Add all dry spices and tomato. Stir and cook for 3-5 mins or until tomato is soft and a little oil starts to float.

  4. Remove spice and tomato mixture from heat atnd add the cooked beans. Stir and cover lightly.

  5. Let stand 5 mins before serving to allow flavours to merge.
