Indian Greens - By replacing the 1/2 cup of butter normally in this recipe with 2 Tablespoons of heart healthy margarine and a cup of chicken broth, I removed more than 80% of the fat but leave all the flavor intact. Up the quantity of Cumin, Chili peppers, Garlic, Cumin and Coriander to taste -- and you can make this recipe with any combination of 2-3 pounds of greens - including kale or turnip greens!

Recipe Ingredients for Saag Paneer

2 T 67% buttery spread
1 cup low sodium chicken broth
2 teaspoons cumin seed
30 g green chile pepper, seeded and diced
110 g Yellow Onion
2 cloves garlic, chopped
2 tablespoons ground turmeric
1 pound chopped fresh mustard greens
1 pound chopped fresh spinach
1 teaspoon ground cumin
1 teaspoon ground coriander

Recipe Directions for Saag Paneer

  1. In a large skillet or wok, melt butter over medium-high heat, and cook and stir cumin seed, chili pepper, garlic, onion and turmeric until fragrant, about 2 minutes. Whisk in 1/2 of the chicken broth and return to a steamy simmer.

  2. Stir in the chopped mustard greens and spinach a little at a time, adding the tougher parts first (the stems and thicker leaves). Continue to add greens, add remaining broth and cook and stir until all greens have been added and all are thoroughly wilted.

  3. Stir in the cumin, coriander, and salt (to taste). Cover; reduce heat and simmer until greens are tender, about 10 minutes, adding water (or chicken stock) as needed to keep the greens moist.
