Makes 6 mini-baguettes, each 3 servings of approx. 60 grams. I make with a bread machine. A pan of water in the oven will help form a hearty crust.

Recipe Ingredients for Rye Whole Wheat mini-baguettes

1 2/3 cup water
2 tsp honey
1/2 tsp salt
3 grams lite salt
1 1/4 cups rye flour
2 1/3 cups whole wheat flour
2 tbsp whole wheat flour
3/4 cup bread flour
1 1/2 tsp bread machine yeast
1 tbsp olive oil
3 tbsp bread flour

Recipe Directions for Rye Whole Wheat mini-baguettes

  1. Place all ingredients in bread machine except olive oil and last 3 tbsp ofbread flour, in the order as specified in the bread maker instructions. Select dough setting.

  2. Preheat oven to 400 degrees with pizza stones in oven.

  3. When cycle is complete, kneed with additional whole wheat flour as needed. Shape into 6 small bread sticks on pizza peels dusted with corn meal.

  4. Let rest covered with a dish towel 15-30 minutes, until doubled in size.

  5. Transfer to the pizza stones and cook 15-20 minutes.
