Mix between rye and wheat flour, cooks quickly and doesn't rise too much but doesn't taste bitter.

Recipe Ingredients for Rye Muffins

1 cup wheat flour
1 cup rye flour
1/3 teaspoon salt
2 teaspoons baking powder
1 egg
2 tablespoons brown sugar
1 cup soy milk
2 tablespoons butter

Recipe Directions for Rye Muffins

  1. In a small-medium bowl sift the wheat and rye flour, the salt, and baking powder.

  2. In a small bowl crack the egg in then beat with the sugar, if possible let it warm to room temperature.

  3. Add in the soy milk (or any milk) and stir again. (If possible, room temperature also)

  4. Melt the butter all the way and add to milk-egg mix.

  5. Pour in ~3/4 of the liquid to the flour, mix well. Add the rest in; the dough is very sticky (unless everything was rather warm, and even then it still is).

  6. Fill in greased muffin cups about half way, more or less.

  7. Top with some oats, nuts or other. (optional)

  8. Cook in preheated 400F oven for about 12 minutes.
