Dark, rather dense tasty bread that seems sweet yet without excess sugar

Recipe Ingredients for Rye and mixed nut bread

16 oz rye flour
16 oz water
1 tsp dried yeast
2 tsp sugar
1 tsp salt
2 oz mixed nuts
1 oz pumpkin seeds
1 oz sultanas

Recipe Directions for Rye and mixed nut bread

  1. warm the water

  2. mix the dry ingredients

  3. pour them into the warm water, stirring all the time

  4. mix the dough strongly (bread maker is useless with this dough as there is very little gluten in it) for five minutes

  5. spread evenly in a 8 x 8 inch loaf pan, should make a layer about 2 inches deep

  6. allow to prove for 40 minutes - it does not rise much

  7. bake in cool-ish oven for 60 minutes until firm to touch

  8. turn out to cool
