A dark bread flavored with caraway seeds

Recipe Ingredients for Rye Bread

15 fl. oz. water
1 1/2 tsp salt
2 tbs vegetable oil
2 tbs molasses
1 tsp white vinegar
2 cups whole wheat flour
1 3/4 cups flour, (add 1 Tbs vital gluten)
1 cup rye flour
2 tbs buttermilk powder
2 tbs caraway seeds
2 1/2 tsp active dry yeast

Recipe Directions for Rye Bread

  1. In a bread machine, add the ingredients in order. Set the machine for the dough setting (#10) and press start. It takes about 1 1/2 hours for the machine to mix, knead and complete the first rise. Remove dough to a lightly floured counter top and knead. Form dough into a ball and place in a large glass bowl coated with butter and cover with a damp cloth. Raise a second time (about 35 minutes).

  2. Knead the dough again. Divide into 2 loaves. Place in lard coated bread pans and let rise for 1 hour. Bake in a preheated 350 degree oven for 40 minutes. You can add a glaze to the loaf by brushing with a mixture of 1 beaten egg, 1Tbs water, and 1 tsp sugar 10 minutes after starting the bread to bake.
