Vegetarian lasagna made with Morningstar Griller Crumbles

Recipe Ingredients for Ruth's lasagna

196 g lasagna noodles
2 lbs 2% small curd cottage cheese
2 eggs
1 tbsp parsley
2 tbsp extra virgin olive oil
48 oz Bertolli Sauce Tomato and Basil
12 oz Meal Starters Grillers Recipe Crumbles
1 onion, diced
1 tsp basil
1 tsp salt
2 cups shredded mild cheddar cheese
2 cups Mozzarella, Low Moisture, Part Skim, Shredded

Recipe Directions for Ruth's lasagna

  1. Cook 7 lasagna noodles al dente

  2. in large skillet, saute onion with griller crumbles. When browned, add spaghetti sauce, basil, salt & any other desired seasonings (garlic, etc). Let simmer while lasagna noodles cook.

  3. In large bowl combine cottage cheese with slightly beaten eggs & parsley.

  4. Spray 9 x 13 dish with cooking spray. Place 3 cooked noodles lengthwise in dish. Cover with 1/2 the cottage cheese mixture. Top with 1/2 the sauce, then 1 cup each cheddar & mozzarella cheeses. Repeat layers, using 7th lasagna noodle to fill in the gaps, if needed.

  5. Bake in preheated 350F oven for 50-60 minutes or until browned & bubbling.
