Recipe Ingredients for Ruth's Healthy Brownies

2/3 cup quick oats
1/2 cup unsweetened cocoa
1/2 cup wheat germ
1/4 cup all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/3 cup vegetable oil
1/4 cup sugar
1/2 cup splenda
120 gram eggs
1/2 teaspoon vanilla extract
1/2 cup chocolate chips
1/2 cup walnuts, chopped

Recipe Directions for Ruth's Healthy Brownies

  1. Heat oven to 350 degrees. Grease a 9-inch square baking pan. Combine oats, cocoa, wheat germ, flour, baking soda and salt. In medium bowl beat vegetable oil, sugar, egg product, and vanilla until blended. Stir in oats and cocoa mixture just until combined. Add walnuts and chocolate chips.

  2. Spread batter in pan and bake about 25 minutes. Transfer pan to wire rack and cool completely. To serve, cut brownies into bars or squares. Yield: 16 brownies.
