4 cups chicken
2 onions
157 grams celery
254 grams carrots
57 grams italian parsley
12 grams chicken bouillon
5 cups chicken broth
12 cups water

Recipe Directions for Ruth's chicken soup- 'traditional' Jewish, 109 cal/2 cups

  1. Buy 7.5 pounds of free range chicken, skin removed.

  2. Cook chicken and chopped onions in water, covered. After boiling, reduce to simmer.

  3. After 1 hour, remove cooked chicken.

  4. After removing chicken from bones, add bones back to water and simmer another hour. Add additional chicken broth (Swanson's organic) and organic bouillon.

  5. Cook another hour.

  6. Remove bones and discard.

  7. Add carrots, then celery and parsley, and simmer another 10-20 minutes.

  8. Shred chicken- add 4 cups of dark meat back to soup. Save rest of meat for salads and other recipes.

  9. Refridgerate soup until fat has congealed to top. Remove it before serving.
