16 ounce carrots
4 stalks celery
3 yellow onions
3 cloves garlic
12 cups cabbage
16 ounce frozen green beans
56 ounce diced tomatoes, undrained
12 cups water
2 tbsp chicken bouillon
1 tsp salt
1/2 tsp pepper

Recipe Directions for Ruthie's Diet Soup

Coat a non-stick soup pot with cooking spray. Over medium-high heat, cook darrots, onions, and celery about 10 minutes until vegetables soften, stirring occationally. Add garlic and cook, stirring, 1 minute. Pour into a 12-quart stock pot. Add cabbage, green beans, tomatoes, and water. Season and bring to a boil. Reduce heat, cover, and simmer for 1 hour until vegetables are tender. There are 55 calories in each 12 ounce serving.
