Use very low sodium (70 mg sodium/cup) chicken broth, like Pacific Natural Foods, and substitute cooked from dry beans for the canned, using a little of the cooking liquid.

Recipe Ingredients for Rustic White Bean Soup

8 oz hot italian turkey sausage
2 medium onions, chopped
2 garlic cloves, minced
31 oz navy beans, undrained, divided
28 oz chicken broth
1 package (10 oz) fresh spinach
1/4 tsp black pepper

Recipe Directions for Rustic White Bean Soup

  1. Coat soup pot with nonstick cooking spray; heat over medium heat/

  2. add sausage, onions, garlic and suate for 8 to 10 minutes or until the onions are tender and sausage is no longer pink, stirring to break up the sausage.

  3. Mash 1 can of navy beans until smooth. Add to the soup pot along with the remaining can of whole beans and bring to a boil.

  4. Add the spinach and pepper, cover, reduce heat to low and simmer for 5 minutes or until spinach is wilted.

  5. Serve.
